Modeling and Simulation to Determine Thermal Properties, Optimum Temperature and Freezing Time Using Planck Equation Model

Ground beef preservation with freezing needs to be performed optimally, both for temperature and freezing time. Thus, it needs to know its characteristics and thermal properties changes during freezing. The aim of this study was to determine the optimum time and freezing temperature in ground beef freezing using Planck equation through simulation in computer programming language where Visual Basic 6.0 was used and Planck equation was then modified in such a way that it can be computed and simulated. The result showed that freezing medium temperature was exponentially correlated with freezing time whilst ground beef dimension and density were linearly correlated with optimum freezing time.
